Mackays Hotel are looking to recruit for a Housekeeper Position and we would like to offer a Modern Apprenticeship SCQF Level 5.
We’d like this to be a starting point for someone to progress within the hospitality industry. Once this level has been completed we would look to move the successful candidate into other areas of the hotel.
Our Housekeeping role has overall responsibility for cleaning guest rooms and hotel areas in a timely and thorough manner to ensure guest satisfaction.
Key responsibilities of the role include:
Clean and service assigned rooms and areas according to established standards and procedures including making beds, dusting, vacuuming, cleaning and sanitising bathrooms, removing trash etc. May include cleaning of other areas, coffee maker, cups, glasses, silverware etc.
Notify supervisor when service is complete so rooms may be sold or occupied. Monitor and control supplies and amenities, and minimize waste within all areas of housekeeping. Report, turn in, and/or log all lost and found items according to established procedures.
We want someone who is a team player, has a flexible schedule and is available to work weekends and holidays. The hours may vary between 16 and 35 hours per week.

About the role
Our brigade of chefs are a friendly, welcoming team of passionate and driven individuals who seek to create mouth-watering dishes using the very best ingredients.
Whether you have just left school or are looking for a change in career, we are looking for an apprentice chef who has a passion for creating flavoursome food, and who shows enthusiasm and a commitment to learn – we can help with the rest!
This is a two-year apprenticeship, during which you will work and be assessed here in our kitchens, as well as attend North Highland College UHI (Dornoch Campus).
What opportunities will there be?
As a member of our dynamic kitchen team, you will receive on-the-job training and mentoring from our experienced chefs whilst working in our two modern, award winning kitchens. You will make full use of the estate’s own kitchen garden, as well as the wealth of world-class, locally sourced produce including shellfish, game and meat.
Throughout your time with us, you will be working towards a nationally recognised SVQ Level 2 in Professional Cookery. Should you do well, we can offer excellent progression and development opportunities here in our team to ensure that you career continues to grow.
What will I be doing?
You will assist in the preparation, creation and presentation of dishes for the club’s daily offering of breakfast, lunch, afternoon tea and dinner.
You will work alongside the kitchen team to ensure meals are provided on time and to the highest standards.
You will learn about different ingredients, flavours, preparation skills and culinary arts to develop your talents and ensure you have all the knowledge to gain your qualification.
What skills do I need?
- Ideally, an SVQ Level 1 in Professional Cookery

Gratuities and the Service Charge
In addition to the base rate of pay, employees of The Carnegie Club also share in gratuities (tips) and the service charge (an additional charge levied on room rates and other services at the Club that is paid directly to staff, similar to a dividend).
Gratuities and the service charge are paid to all employees on a pro-rata basis regardless of their role – every member of the team at Skibo contributes to the overall guest experience and is rewarded as such.
The value of gratuities and the service charge varies, but for reference in 2019 full-time staff at the Club received on average an additional £150 – £200 per month.
